Growing Region

Dong Ding is a traditional Taiwanese oolong tea. Its name, Dong Ding, translates to 'Frozen Summit' or 'Ice Peak', a reference to the high mountain region where the tea plantations are located. Unique to the Lugu (sometimes known as Luku) region in central Taiwan, the tea is recognised for its exquisite flavour profile consisting of sweet, floral and fruity notes with a background of rich, roasted undertones.

Production

The production of Dong Ding involves a seven-stage complex process designed to bring out the distinctive qualities of the tea. The tea leaves are first handpicked and then left to wither under the sun. They are then withered indoors before being pan-fried, rolled, plucked, and dried. The resulting tea is rich in flavour and has a balanced combination of floral fresh and peach notes.
