Eiswein, the frozen grape wine!
Eiswein, also called "Ice Wine," is a unique and delicious dessert wine made from grapes frozen naturally on the vine. and is mainly produced in colder places where wine is grown, such as Germany, Austria, and Canada.
To make Eiswein, you have to leave the grapes on the vine until late in the winter and let them freeze on their own. This process of freezing the grapes concentrates the sugars and flavours inside them, making a delicious wine. The best time to pick these frozen grapes is when the temperature is between -7°C and -10°C (19°F and 14°F).
Once the grapes have frozen, they are carefully picked by hand and pressed right away while they are still frozen. The water in the grapes stays as ice crystals, which separate from the juice that has been concentrated. This process means less juice is made but has more sugar and stronger flavours.
Due to the high sugar levels, the fermentation process for Eiswein is slow and can take several months. The final product is a rich, sweet, complex, and acidic wine that goes well with desserts or can be drunk as an after-dinner drink. Eiswein often tastes like tropical fruits, honey, and citrus, making it a delightful and luxurious wine.

Recipe: Eiswein White Tea Poached Pears
Impress your guests with this elegant, delicious dessert featuring Eiswein white tea.
Ingredients:
- 4 firm pears, peeled and cored
- 4 cups water
- 1 cup sugar
- 1/4 cup loose leaf Eiswein White Tea
- Fresh mint leaves for garnish (optional)
Instructions:
- Combine water, sugar, and Eiswein white tea in a large saucepan.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Add the peeled and cored pears to the saucepan, making sure they are fully submerged in the liquid.
- Simmer the pears for 20-30 minutes or until they are tender but still hold their shape.
- Carefully remove the pears from the saucepan and set aside to cool.
- Simmer the remaining liquid until it reduces by half and becomes syrupy in consistency.
- Allow the syrup to cool before drizzling it over the poached pears.
- Garnish with fresh mint leaves and serve.
