Galangal Ginger, or Special Thai Ginger, is quite different from traditional dried ginger root, and while they look very similar, they taste very different. Both galangal and ginger are similar, but galangal has a sharp, citrus, piney flavour, while ginger has that recognisable fresh, spicy flavour. Galangal is used a lot in Thai cuisine, hence our name, Special Thai Ginger, and is actually stronger tasting than ginger. If you think of Thai lemongrass curry flavour, this is not too far away from the taste of galangal ginger.
