Gyokuro is a full-flavoured loose leaf green tea with a refreshing, sweet flavour and is by far one of, if not the best, green teas from Japan. During production, the tea is covered with black curtains or bamboo and straw shades to increase the presence of chlorophyll and reduce the tannin content. The result? A darker greener leaf that has a sweeter flavour with no bitterness. Usually brewed in a Kyushu, a special Japanese teapot, you can be sure to enjoy a delicious green tea that is very satisfying.

- Per Serving: 1 heaped teaspoon (approximately 4-5g) per small traditional teapot (100ml - 150ml). Gyokuro uses a higher leaf-to-water ratio to achieve its signature rich texture.
- Water: Use freshly boiled, filtered water cooled to between 50°C and 60°C. Traditional cooling is achieved by pouring boiling water between empty ceramic cups before pouring over the leaves.
- Brewing Time: Steep gently for 2 minutes for the first infusion without agitating or stirring the leaves.

It all comes down to a traditional agricultural technique where the tea bushes are completely covered under dark curtains for a few weeks before the harvest. By carefully shielding the leaves from sunlight, the plant naturally produces much more chlorophyll and amino acids, which gives the processed leaf its deep emerald colour and unique umami flavour.
Freshly boiled water must be allowed to cool significantly down to between 50°C and 60°C to prevent bitter catechins from releasing into the liquor. This exceptionally low temperature allows the delicate, sweet amino acids (L-theanine) to extract perfectly, resulting in a smooth, savoury cup completely free from harsh bitterness.
